From the Mountains of Burundi

This stunning coffee comes from the Nemba Washing Station in the northern province of Kayanza, Burundi, an area renowned for its rich volcanic soils and high-altitude conditions — perfect for cultivating exceptional Arabica coffee. Over 3,000 smallholder farmers, each with an average of just 150 trees, contribute their carefully handpicked cherries to Nemba Station.

The farms are situated around 1,700 metres above sea level, close to the Kibila Forest. This high elevation slows the ripening process, allowing the cherries to develop a natural sweetness and complex acidity that’s unique to the region.

The Art of Yeast-Inoculated Fermentation

What truly sets Nemba Oro Natural apart is its innovative yeast inoculated dry natural process, a technique that elevates the coffee’s flavour to extraordinary heights. During the harvest season, only the ripest cherries are handpicked before being placed in epoxy-coated concrete fermentation tanks.

Here, LALCAFÉ ORO™ yeast, developed by French company Lalcafe, is introduced to guide the fermentation process. The cherries are left to ferment for up to 80 hours — far longer than traditional washed coffees, which typically ferment for just 12 hours.

This extended fermentation allows a fuller development of flavour and aroma. The result? A cup that’s intensely juicy, bright, and complex, with a vibrant fruit character and delicate floral finish.

Las Nubes, meaning The Clouds, sits in the Isabelia mountain range, surrounded by waterfalls and forested landscapes. Producer Victor Robelo is the third generation to cultivate this land. His family was displaced during the civil war but later returned to reclaim the farm, investing in sustainable practices such as low-water demucilagers and recycling run-off into organic fertiliser.

The result is a coffee that honours both tradition and innovation. This medium roast washed Maragogype reveals notes of blueberry, chocolate, and peach, with an overall sweetness that lingers on the palate. With a cup score of 85 and Rainforest Alliance certification, it’s not only delicious but ethically grounded.

But with the Mountain Water Decaffeination Process, that stereotype no longer holds true. This innovative, chemical-free method ensures you can enjoy all the flavour of your favourite beans without the caffeine.

What Is the Mountain Water Process?

The Mountain Water Decaffeination Process (MWP) is a natural and environmentally friendly method developed in Mexico. It is carried out exclusively at the Descamex facility in Veracruz, using crystal-clear glacier water from Pico de Orizaba, Mexico’s tallest mountain. This pure mountain water is the foundation of the process, which gently removes caffeine while preserving the bean’s essential oils, sugars and flavours.

Unlike traditional decaffeination methods that rely on chemical solvents such as methylene chloride or ethyl acetate, Mountain Water uses nothing but water, temperature and advanced filtration. This ensures the result is a 100% chemical-free decaf coffee that stays true to its origin.

How Does It Work?

The process is both simple and precise:

  1. Soaking the Beans – Green coffee beans are immersed in hot water. This draws out the caffeine, along with some of the soluble flavour compounds.

  2. Filtering the Caffeine – The caffeine-rich water is passed through a special carbon filter that selectively traps caffeine molecules while leaving behind the flavour compounds.

  3. Re-Infusion – The beans are then re-immersed in this flavour-saturated, caffeine-free water. Because the liquid already contains the bean’s natural flavours, only caffeine is extracted further, while the original profile is preserved.

  4. Drying – Finally, the beans are carefully dried to their ideal moisture content, ready for roasting.

The result is green coffee that is 99.9% caffeine-free, yet still retains the richness, aroma and complexity of its caffeinated counterpart.

This medium-bodied blend offers a serene ride through caramel, chocolate, nut and citrus notes, and is perfect for a cafetiere, drip filter brewer or an aeropress. It works perfectly with or without milk. 

And guess what? It won the Great Taste Award 2020. Judges commented: “Great big caramel chocolate notes from the grounds. This surprisingly, transfers to a degree of bright low level fruit on the nose. A pleasing mouthfeel. The finish is balanced and provides a lift on the palate.”

Water makes up 99% of your cuppa!
Even though water makes up most of your brew, it is often overlooked. The quality of water you use will affect the taste and look of your cup of tea. Oxygen in the water is pivotal in infusing tea leaves; pulling out their flavour and releasing their scent. The best to use is fresh cold water. If you live in an area with hard water, you may want to consider using a filter or bottled spring water.

Loose leaf or teabags?
In the past decade or so, the main appeal of loose leaf tea has been its noticeable difference in quality and taste. The main appeal of teabags is their convenience. Since their invention in the early 1900s by Thomas Sullivan, they have been seen as the “fast food” version of tea and back then, the quality was certainly lower. In recent years, the quality of some teabags has increased dramatically. This has partly come with the introduction of whole-leaf teabags. 

How much tea?
It depends how strong you like it, but about one heaped teaspoon per cup should be enough. If you’re preparing a large pot, an average of one teaspoon per person is generally a good approach.

Strength
Again, it’s all about personal preference, but there are various factors to be aware of. Strength can be determined by both colour and taste. Using a larger amount of tea, raising the temperature of the water and increasing brewing time will likely strengthen the brew. Of course, being mindful of the amount of milk you add will also help you achieve your desired taste.
